Chef Cater worked on a Dinner boat I had an interest in - up to 100 people. He served gorgeous fresh fish dinners. Fish was always prepared well, his Japanese inspired sauces were first rate. I lived in Japan for 6 years and can attest to the quality and Japanese influence of these dishes. He would present well and always made a point to greet customers in a professional and friendly manner.
