Mike catered our wedding and everything was absolutely wonderful! The ribs, polish sausages, sliders, and popcorn fit our Chicago themed wedding perfectly!! He was so accommodating and was so flexible and clear. We will definitely use Mike again, this was a GREAT experience!! Thank you, Mike!!

Mike provided the catering for or daughter's first birthday party! We went with his famous chili that was mild enough for the kiddos but he brought some condiments that spiced it up for the adults! The food was great and working with Mike is simple and easy!

Great experience! We setup a special anniversary dinner for our parents (who have not dined our since before COVID) and they were blown away! They said Chef Mike was phenomenal and will definitely use him for any catering moving forward!

Details: Special occasion (birthday, anniversary, etc.) • 2 guests • Dinner • Dessert • Premium (high end ingredients) • Dessert • Cold beverages (non-alcoholic) • American - formal • Italian • Gluten free or celiac • Meal prepared onsite • Only once • My home, venue, etc.

Chef Mike was very helpful and considerate in guiding the appetizing needs leading up to my birthday party. Quickly integrated himself into the tone of the event, becoming part of the family and serving the delectable hor d'oeuvres with great poise. Food is an integral part of any life event and it was a pleasure to have him and his creations leading the charge with this one!

  • What should the customer know about your pricing (e.g., discounts, fees)?

    Customers always seem to want to order too many or too few appetizers for their parties. Here is what I have learned over the years: Dinner Party – 6 appetizers per person. Serve only 2 to 3 appetizer items, but offer appetizers to only whet their appetite without ruining it. Cocktail Party – 8 to 12 appetizers per person. Guests will generally eat about 5 appetizers each during the first hour and will eat about 3 appetizers each for each subsequent hour. If you wish to have a sweet course save it for the last hour and expect to serve 2 portions per guest. Plus fruit. People love fruit and it never seems to go to waste!

  • What is your typical process for working with a new customer?

    The first thing is to listen to the customer. Determine what the occasion is, the length of time, type of guests, and style of service. As I get to know the customer I may be able to make suggestions from my experience that will enhance the event.

  • What types of customers have you worked with?

    I have designed baby & wedding showers, birthdays & anniversaries, baptisms, rehearsal dinners, Holiday parties, corporate events, and fund raisers. I've met celebrities, politicians, ministers, and grandmothers!
