Gerard was the easiest part of our whole wedding experience. He went above and beyond and truly cared about our special night. There was a mix up that was my fault on our wedding day with a welcome drink and he still took care of it. He did a tasting for us and some family members at no cost and we had plenty of food left over. We also had leftovers on our wedding night. Every thing was delicious. All of our guests loved the food.

It was only in March that we decided to marry in June 2018, and we decided on a small wedding of 60-75 people. And the very first detail that I wanted to take care of was food. I googled "caterer for small wedding in New Orleans" and miraculously, on Thumbtack, Gerard Maras's name came up - there were other names, but in reading about Chef Maras's life in the cooking world, I instinctively knew he was the one. I responded to his message inviting me to contact him. He quickly responded and once I spoke to him, I knew he was the best choice for me. He was interested in finding out about my vision for our wedding, and in listening to my thoughts and ideas about what I thought I might want, over the next few weeks he presented me with pictures of food possibilities and ideas. He was so helpful in discussing each dish with me, and soon came up with a finished menu for a wonderful wedding feast with delicious, unusual and beautiful food. A wedding with all the details to figure out can be very stressful, especially on short notice, but Gerard Maras exudes a sense of calm, confidence and professionalism that made everything for our wedding smooth and easy. The food was wonderful, especially his freshly made pasta with a crawfish sauce, and his food was the hot topic at our wedding. All of our family and friends are still talking about having had the best food they ever had at a wedding. He has a unique talent in not only being a wonderful chef, but knowing what foods are complimentary to each other, and presenting food beautifully, and using only the best seasonal, highest quality and fresh food. He is a real artist in that he makes everything seem effortless, but what he does requires the greatest talent and skill. Thank you Gerard, for making our wedding a truly memorable event - not just for Joe and I, but for all of our family and dear friends.

My husband and I had the pleasure of working with Chef Gerard recently for a very important dinner at our home for ten guests. Chef Gerard prepared a magnificent six-course dinner. He worked with me with the menu items, gave me several choices with photos and descriptions, gave his valuable input in matching of the types of ingredients and helped me with the choice of matching wines! The dinner was a success; all my guests made a point of coming to the kitchen and thanking Gerard. Not only is Gerard an award winning chef, he is a joy to work with. He loves his craft and enjoys preparing outstanding dishes, with elegant presentations. His server Peter was also professional and very pleasant. We are very much looking forward to working with chef Gerard again.

Gereard was amazing! We hired him for our friends 40th birthday trip back to her childhood city. Since day one of hiring Gerard he had great communication and made a very thoughtful menu that included all we wanted. We are in California so the great communication was needed and we felt completely at ease that everything would be taken care of....We explained to Gerard that this dinner was for our friend's 40th Birthday and she thinks I'm making dinner, this was a surprise. She had not been back to NOLA for 15 years. She had her Mom, brother, sister and childhood friends coming in that night as well. Gerard made so much Amazing food and we had great leftovers to eat the next day...the crab cakes were so good I ate them cold out of the fridge for breakfast! We look forward to coming back some day and doing it all over agian!

I set a basic price per guest. If the client wants to upgrade food or add services, we discuss price between us.
What is your typical process for working with a new customer?
When working with a client, I want to first find out exactly what they envision their event to look like. Create the right ambiance and develop with the host the menu that will make their event memorable...details! So much is about the detail.
What education and/or training do you have that relates to your work?
I worked through high school and college in fine dining restaurants, most of which were run by European Chefs. These Chefs taught me classic techniques in French cuisine, which was the foundation of my culinary education. I have worked in New York, Palm Beach. and extensively in New Orleans..my education is on going....
