- What education and/or training do you have that relates to your work?
Oh yes I educ ate daily but beyond that I re certify every 5 years and always studying the health codes they change so quickly then I have to give all the knowledge to the staff and make sure they know it as well.
- How did you get started doing this type of work?
Wow for me I was groomed into it starting at age 12 working in my grandparents restaurant. For Any One Else Thinking About A Career In Catering Or Being A Chef Get Your Culinary Degree But Before That Go Talk To A Chef AND Find A Job In A fine. dnning Restaurant AND WORK It FOR A Year Then Decide If This Is The field you want to spend the next 20 to 40 years in. Before paying 40 or more thousand dollars on a degree you end up not using....
- Describe a recent project you are fond of. How long did it take?
My dear long time friend Johnny D. Had 5 girls previously when we were located in Louisiana I had catered the first 4 daughters weddings over the stretch of about 5 years. Well here I am in Las Vegas on a Friday night and my phone rings and I pickup and Johnny is on the line tells me his plane just landed in Vegas and he needed me to come meet him there quite a surprise for me. So I get there and get him loaded up go hit a local tavern for a cold one and Johnny lays it on me that his baby girl is getting married to a fine young man and he's the son of a very well known restaurant franchise owner and that I had catered his other 4 daughters weddings and that I was doing his 5 and final daughters wedding handed me tickets and a check and then told me every restraint owner in Louisiana would be attending. Well to shorten it up it was an amazing event the bride had the perfect day and every person there was in complete awe of the quality and presentation of the menu so many complement from so many in the industry but the best complement came from the father of the groom he said chef ward you and I have been doing this a long time and my company dose a fair amount of catering but in all my years I've never attended a wedding reception with food this spectacular it was beautiful and flavors that I've never even experienced I was a bit disturbed that you were catering my son's wedding I was really set on d owing it how ever at this moment I am so glad you were able to and I have a 14 year old daughter and when she's 30 and I allow her to start dating and her day comes be assured you will be doing her wedding. That in its self was a career day for me .
