Chef Gilleum and his team worked beyond our expectations! We had approximately 60 guests for a buffet setting as well as a server bringing out au d’oeuvres. Everything was perfect! Working and communicating with him was easy. From being punctual, great team work, buffet setup, presentation, and cleanliness was fantastic! The food was delicious!! All my friends were astonished by the tenderness of the ribeye and brisket, the flavor of the chicken, shrimp, tuna, mushrooms…one flavor after another! Not to forget his wife, Natalia was our bartender and served the best drinks I’ve had by far!! Finally, I cannot forget the friendliness of all his team! Chef Gilleum put so much effort and worked so hard to make things spot on and all with a smile for the entire 7 hours! He made it happen and my anxiety was nowhere near 1/10!!! Big thank you to you Chef and your team! Until our next event!!

We worked with Smokey Jay's and Chef Gilleum for a steakhouse style dinner as the welcome event for my Bachelor Party in Vegas and everything was to absolute perfection. After realizing it was going to be cost-prohibitive for 16 guys to eat at a real steakhouse, I searched on Thumbtack and came across Chef Gilleum among a few others. What initially sold me was the variety (3 proteins included in the same price others were charging for just 1) and the professionalism. He was super responsive during the planning and helped customize the menu to keep it to around $100 per head. We also went with the bartender service, which happened to be his wife, who made 3 different cocktails for the 3-4 hours the food service lasted, all super well made. The food was outstanding. We had Ribeye, BBQ salmon, and smoked chicken plus mac & cheese, sour cream mashed potatoes, an amazing street corn elote dish and a black garlic ceasar salad. All amazing. Seriously not even one just average dish in the bunch, but that smoked chicken was probably the best I've ever had. I could go on and on, but all that really needs to be said is that I would 100% go with Chef Gilleum again and you should too if you want restaurant quality food for a reasonable price. Thanks for kicking off my weekend the right way!

Chef Gilleum was wonderful catering husband's birthday party. From our taste testing of his delicious foods to the day of the party, everything went as planned. The food is top notch, and everyone loved it. My husband was pleased and felt honored to have Gil as the chef! We are forever grateful we found him and highly recommend him to cook for us again!

Thank you Smokey Jays for making our evening with my family an amazing experience. I highly recommend Smokey Jays. Chef Gilleum was very easy to work with. He made it very simple to come up with a fantastic menu. He stayed within my budget. He was quick with response to my questions. Dinner night he communicated with me hours before. He was on time and very professional and properly dressed. He was very conversational as he prepared our meal. He surprisingly brought my family a special extra item. His food is delicious and we had plenty of leftover for the fun midnight snacks. I can’t thank him enough.
