What advice would you give a customer looking to hire a provider in your area of work?
When you are searching for a caterer, ask where they prepare the food.
On Premise caterers may prepare the food in your home, office or a mobile kitchen.
Off Premise caterers will prepare the food in a licensed commercial kitchen.
If a caterer ever tells you that they prepare the food in their own home before transporting it to you, then they have just told you that they are breaking the law and are most likely not even licensed or insured as a caterer.
Caterers falling under the Cottage Laws, such as certain bakers may be exempt from this rule, but still need appropriate licensing, inspection and liability insurance.
There's nothing wrong with asking your prospective caterer for proof of insurance. Also ask if they are certified in Food Safety.
What questions should customers think through before talking to professionals about their project?
Many inexperienced perspective catering clients grossly underestimate the costs involved in catering a successful event. We never claim to be the least expensive. Our claim is that will always provide the best possible service and the absolute best presentation.
You may be able to eat a restaurant meal for less than it costs to hire a reputable caterer.
With a reputable caterer, you may be paying a premium for the services of custom menus, premium items, excellent presentation and decor. But you are worth every bit of it.
