During a recent business trip to Philadelphia, I had an opportunity to spend some time with my friend and chef Alfredo Aviles. I was delighted to receive an invitation to his home where he would cook me dinner. I have known Alfredo for many years now and can’t remember a time when he wasn’t trying to perfect his skills in culinary and beverage arts. Anticipating his cooking I didn’t eat all day. Shortly after I arrived, a beautiful presentation of a caprese appetizer was served. I don’t know where in February he found the deep red and perfectly ripe and sweet tomatoes, combined with a slightly salty mozzarella and fresh basil leaves that gave off a perfect aroma. A flawless taste of summer dish with olive oil (grown and cold pressed in Georgia – my contribution) and a uniquely infused balsamic glaze which added a unique and surprising spin on a familiar dish. For the first dinner course Alfredo prepared one of my favorites, Caesar salad. Crunchy fresh romaine lettuce with just the right amount of dressing as to not overpower yet still serve up the perfect kick from a balanced blend of parmesan cheese, garlic, and lemon. I took home a bag of the homemade crouton slices he served on the side. For the main course Alfredo transformed what is a French peasant food into a gourmet experience, Coq au Vin. I detected a hint of brandy combined with red wine. What I like about Alfredo’s cooking is that he selects fresh locally sourced ingredients, mushrooms, pearl onion, fresh rosemary and thyme, chicken legs and Amish bacon from Philly’s famous “Reading Terminal Market” The wine reduction suggested a hint of brandy. Garnished with fresh chives this dish was the perfect blend of comfort food and healthy eating. To finish what was a lovely meal we were served a pistachio gelato in a cone dipped in fresh crushed pistachios.

My partner and I have had a few experiences with personal chefs in the past for private parties, but we decided to treat ourselves to a night at home for our anniversary. We had been searching for someone who seemed like the “perfect fit” and Alfredo had checked off every box. First thing that comes to mind is, WOW! Beyond how incredible the dishes were, he had completely exceeded our every expectation. He was punctual, professional, catered to my food allergies with ease and you can tell he has a real passion for what he does! Thankfully he took a couple pictures before serving us, I devoured it before I had the chance to take any 😆 Already convincing my partner to hire him again haha. Thank you for making our special night even more special!!
