Chef Dietz has over thirty years experience as an executive chef and has specialized in upscale seafood and steakhouse cuisine. He has worked in some of the finest restaurants from San Francisco to Dallas including Eddie V's Prime Seafood, Pappa's Brothers Steakhouse, the Oceanaire, and Cafe Pacific. Chef Dietz has a degree from Le Cordon Bleu in San Francisco in Classic French and International Cuisine, as well as the Oriental cooking school in Bangkok, Thailand. He has served on the faculty of Collin College Culinary teaching Garde Manger and Advanced Food Preparation. He has earned two James Beard Awards and has appeared in numerous TV spots on ABC, NBC, CBS, FOX, and TXCN. He has also been featured in The Dallas Morning News, Texas Monthly, Nations Restaurant News, and Seafood Business. Chef Dietz has transitioned his service to small private events and home cooked meals on a weekly basis. Chef Dietz has all required licensure including ServSafe, Health Department, and Metro Eatz is insured.

Chef Dietz was absolutely amazing!! We had an upscale steakhouse dinner in the comfort of our own home and it was perfect! Chef Dietz was timely in his arrival as well as the evening in general. He arrived right before 6pm and as promised we were dining by 7pm. Chef is very personalable and the food was delicious!! Will definitely hire Chef Dietz again.

Wow! Chef Brian was amazing! He was on time and immediately went straight to cooking. When it came to finalizing the menu I wasn’t as familiar with different foods, so he took the time to figure out what my husband and I would like and love. And he was so right! We got to try new dishes and everything tasted so fresh and light. I’m soo happy I booked with him to surprise my husband for his birthday. He made a menu card with my husbands name on it and it felt so personal and fancy! Thank you a ton, most definitely using your service again!

My family and I had a terrific Asian themed anniversary dinner with Brian as our personal chef for the evening. Everything was fresh and delicious, from the pot stickers, to the scallops, beef filet and sea bass and creme brûlée. The Chinese broccoli was great as well! My teenage boys are picky eaters and they ate everything that was put in front of them. Also enjoyed learning several techniques with the tools we have in our own kitchen. My wife raved how nice and clean he left the kitchen. Highly recommend, Brian. We’re planning to use him again in the near future.

Hired Chef Brian for a small, private dinner for my wife’s 30th birthday. He was amazing to say the least. He arrived on time, set the table, served the wine, cooked an amazing fine dining meal and a decadent dessert! He even left the kitchen cleaner than he found! 10/10 and will definitely use his services again!

  • What should the customer know about your pricing (e.g., discounts, fees)?

    $115 per person from 1-8 people. $105 per person up to 16 people. Price includes premium ingredients, three course printed menu of choice, shopping and delivery of all groceries, preparation of meals onsite, serving of meals, and thorough clean up.

  • What is your typical process for working with a new customer?

    Discussing the budget, occasion and goals of the event. Finding the food expectations such as special diets, health restrictions, allergies, and likes and dislikes. I also like to discuss facilities and service-ware possibilities. Are there any small children or pets near the working space.

  • What education and/or training do you have that relates to your work?

    Culinary degree from the California Culinary Academy in San Francisco. I have been working as a professional executive chef in the fine dining restaurant industry for over twenty years. I have earned two James Beard awards and have run some of the finest seafood and steakhouse kitchens in Dallas including Cafe Pacific, the Oceanaire, Pappas Brothers Steakhouse, and the past nine years at Eddie V's Prime Seafood and Steak.
