Chef Brian Dietz offers the finest private dining experience in North Texas. With a focus on client expectations, quality and sanitation. Menus are tailored for any event or occasion. Chef Dietz has over thirty years experience as an executive chef and has specialized in upscale seafood and steakhouse cuisine. He has worked in some of the finest restaurants from San Francisco to Dallas including Eddie V's Prime Seafood, Pappa's Brothers Steakhouse, the Oceanaire, and Cafe Pacific. Chef Dietz has a degree from Le Cordon Bleu in San Francisco in Classic French and International Cuisine, as well as the Oriental cooking school in Bangkok, Thailand. He has served on the faculty of Collin College Culinary teaching Garde Manger and Advanced Food Preparation. He has earned two James Beard Awards and has appeared in numerous TV spots on ABC, NBC, CBS, FOX, and TXCN. He has also been featured in The Dallas Morning News, Texas Monthly, Nations Restaurant News, and Seafood Business. Chef Dietz has transitioned his service to small private events and home cooked meals on a weekly basis. Chef Dietz has all required licensure including ServSafe, Health Department, and Metro Eatz is insured.

Chef Brian was easy to work with, very responsive, flexible as our needs changed, and the dinner was amazing. He customized the menu and flavors for my guests and was a delight to chat with while working. I was hosting a birthday dinner party in a rented house and didn’t know what to expect from the kitchen tools. Chef Brian was easily able to work with the equipment there (plus equipment he brought). He also customized his printed menus to reflect our special event which made a fun party favor. My only regret is that I don’t live in Dallas and can see him more frequently. He’s really that good. My menu: -Seared scallops, roasted tomato and citrus salad -Surf & turf - beautifully-cut beef filets, gigantic lobster tails, French-whipped potatoes, and roasted Brussels sprouts -Bananas Foster cake which he individually flambéd - others have said this, too, but it is *amazing*

Chef Brian is awesome! He was quick to get back to me on my request and so easy to work with on picking a menu. This dinner was for my grandparents and they were so taken aback of course getting to have a private dinner made by a professional. Everyone thought Chef Brian was so nice and he even taught them a few things. The Asian themed dinner was delicious, from the ponzu butter scallops to the Chilean sea bass and the big finale bananas foster, each item was beautifully presented and well made. 10/10 would totally do this again!

WOW is an understatement! I am still salivating from last night's dinner prepared by Chef Brian. In fact, I just finished my bananas foster for breakfast and it was just as delicious as it was freshly prepared last night.

My husband couldn't decide what restaurant he wanted to go to for his birthday and I had a last minute idea to check what it might cost to have a chef come to cook at our home - I am so incredibly glad we found Chef Brian! He was so responsive and was great at making recommendations for our menu. He was super flexible in preparing a steak for me and a fish for my husband since fish is my husband's favorite protein but not so much mine :-) He was also a true professional - you could witness his focus in the kitchen, he offered to open up our wine for us, and even left our kitchen and dishes totally immaculate - I can't believe how clean our kitchen was after he left! Lastly, I have to give so much credit to the chef for climbing two flights of stairs to our rooftop to deliver our main course and dessert - what an amazing experience he provided!

It was so much fun watching Brian cook and hearing about his career as well as learning different tips and tricks in the kitchen.  He is clearly a well-trained chef and knows how to pair ingredients, flavors and textures into incredible dishes. 

We loved every bite of the food! My steak was so perfectly cooked just a little over medium as I had requested - so much flavor with every bite! Perfectly seasoned and served so fresh and hot off the pan. My husband said his fish was one of the best fish he has ever tasted. I don't know if I've ever seen my husband so giddy over a meal - he was nearly speechless other than muttering how good the fish was. We had whipped potatoes and broccolini for our sides and the potatoes were SO unbelievably creamy and silky! The broccolini was crisp and perfectly prepared!

The highlight of the dinner was the bananas foster which Chef Brian recommended as dessert. Even if you're not a banana fan I cannot emphasize how much you need Chef Brian make you this for dessert - it was the absolutely best dessert I have ever had in my life. My husband agrees. 

We cannot wait to have Chef Brian back to cook another meal - whether it's a date night or a gathering with friends or family, you will wow everyone if you invite him to cook for you!

Wow! Chef Brian was amazing! He was on time and immediately went straight to cooking. When it came to finalizing the menu I wasn’t as familiar with different foods, so he took the time to figure out what my husband and I would like and love. And he was so right! We got to try new dishes and everything tasted so fresh and light. I’m soo happy I booked with him to surprise my husband for his birthday. He made a menu card with my husbands name on it and it felt so personal and fancy! Thank you a ton, most definitely using your service again!

What should the customer know about your pricing (e.g., discounts, fees)?
$115 per person from 1-8 people. $105 per person up to 16 people. Price includes premium ingredients, three course printed menu of choice, shopping and delivery of all groceries, preparation of meals onsite, serving of meals, and thorough clean up.
What is your typical process for working with a new customer?
Discussing the budget, occasion and goals of the event. Finding the food expectations such as special diets, health restrictions, allergies, and likes and dislikes. I also like to discuss facilities and service-ware possibilities. Are there any small children or pets near the working space.
What education and/or training do you have that relates to your work?
Culinary degree from the California Culinary Academy in San Francisco. I have been working as a professional executive chef in the fine dining restaurant industry for over twenty years. I have earned two James Beard awards and have run some of the finest seafood and steakhouse kitchens in Dallas including Cafe Pacific, the Oceanaire, Pappas Brothers Steakhouse, and the past nine years at Eddie V's Prime Seafood and Steak.
