With over 20 years in the hospitality industry we combine a passion for creating quality cocktails, helping you plan your wedding, providing knowledgeable waitstaff and outstanding customer service.
As a mixologist most recently I was the mastermind behind a beautiful cocktail menu made from scratch ingredients. I love to provide a customized experience. Every event I’ve done is unique in its own way. That’s why you should have cocktails inspired by “you” utilizing the local fresh ingredients the Central Coast has to offer. We will work together to customize cocktail names to bring the whole event together to wow your friends and family.
My wife Aubrey has been coordinating wedding’s for over 10 years. As a bride planning your wedding we want you to be a guest at your own wedding. We handle all the details from the day you decide to work with us until the last minute the day of your wedding. We are known as Mr. & Mrs. accountable. We show up early and stay late to everything we do. We understand some of the old school philosophies my grandfather taught me like work ethic, following through with what you say you’re going to do and just simply showing up on time. Daring to Dream is above all a thoughtful and professional team that is more than capable of handling all your wedding needs. For my daughter’s wedding, we chose Daring to Dream for Bar service and our photo booth. Brian was very helpful in assisting us in taking care of every aspect of drink service, from detailed shopping lists to the idea of having hydration stations instead of water bottles (best decision ever!). On the day of, they took care of everything, so that even on one of the hottest days in San Miguel everyone had refreshing water and a cold drink! The signature cocktails were amazing and a big hit with guests. One of the biggest life savers was that Daring to Dream took care of pick up and handling of the ice, which alone was such an amazing service that I literally could not imagine what the day would have been without it. And the photo booth was perfect. The photo booth itself is classy and super fun. We opted for the addition of the photo printer which was a great addition for guests to have a way to remember the day. There are other options out there for your wedding needs, but I would recommend Daring to Dream over and over again. If you are looking for a team of professionals who are knowledgeable and kind, and who will make your big day run smoothly look no further! Thank you so much for all you did!

Daring to Dream bartended and provided waitstaff at our 130 person wedding. They really went above and beyond! They meshed perfectly with our vendors and everyone on staff was beyond friendly and on it. We’re grateful we went with them, they helped make our day what it was!

There are not enough words of PRAISE for Brian Gardner. If not for him our entire event would have probably evaporated into a pool of my tears!! To say he saved the day is an understatement. Brian and Margaret provided EXCEPTIONAL “wait staff” – in professional attire. They looked wonderful. From preplanning to setup to cleanup, he was not only monitoring EVERY DETAIL in my event, he was also watching out for me! When I was busy making the rounds greeting my guests, Brian discreetly tapped me on the shoulder and told me to go eat something – what a nice man. THANK YOU, Brian! I don’t even know where to start!
From our very first phone call Aubrey and I hit it off immediately. I knew right away she was the one we needed for our wedding to run smooth and so we could feel like guests rather than hosts. Brian was a rockstar too. I forgot a few things the day of and he ran here and there for us without wasting a single second and with a huge smile on his face. From helping plan, to contacting all vendors, to making a perfect timeline exactly how we wanted; we truly had the most incredible day and it wouldn’t have been as amazing without these two wonderful human beings.
