I have thirty years of experience in French, Italian, Spanish, Mediterranean, and Indian cuisine. I have worked in a five-star hotel, from fine dining to casual dining, vegetarian, vegan, and special diet meals. I can prepare dinner for 4 to 100 people.
I have developed step-by-step methods for learning. I am a trained Executive Pastry Chef and an educator with teaching licenses, including current Pennsylvania state clearances, fingerprint and child-abuse back round checks. I am a ServSafe Sanitation & Food Safety Management Instructor/Proctor.
Anyone can claim that they are a "chef". I don't know everything about baking & pastry but I know a lot about a lot of baking. I am forever a student, learning new things each day as I have for the past 22 years in the baking industry. I've worked with some of the best Pastry Chefs in the world. I remain current on industry trends via books, magazines and trade shows.
I am a freelance wedding cake baker and decorator. I choose to do freelance, so that way I can always follow my passion. I believe that you should never accept a wedding cake that you couldn't see yourself getting married with. This is because if you don't like what you're doing, your best will not go into it.
I also greatly enjoy doing small petit fours and desserts. I have a bachelor's degree in cake decorating and pastry arts, so you'll know your guests are in good hands!
