Make sure they are highly experienced in the accounting field. Make sure they are knowledgeable in the types of entity selections available for a business owner and the differences in taxation of those entities. Find out how they bill for their work. Many companies bill based on time spent with a client which means if you call them for a 15 minute question, you are likely to get a bill for that question.
