We hired Chef Val for my husband's birthday, to create an exquisite meal while teaching my husband, who loves to cook, some techniques. Chef Val gave us a variety of menu options ahead of time, and we chose the Italian menu, although I know he has an ecclectic and varied background in many other types of cuisine. While preparing the meal, Chef Val demonstrated proper knife handling skills, how to use a blow torch to carmelize sugar on the creme brulee, how to combine flavors for a magnificent main course, and much more...I was drinking wine and not paying TOO close attention, but years later, my husband still uses the techniques Chef Val taught him, and mentions him frequently. Even my teenaged son and daughter learned a great deal--my son especially enjoyed using the blowtorch on the whipped cream that was part of the sauce for the linguini. We invited friends over, and we had SUCH a memorable evening, as well as a delicious meal. We thoroughly enjoyed ourselves, and learned a lot--and getting to know Chef Val better was a bonus! I wish I had better photos of the finished meal, but I must have been too busy eating to stop and photograph the food!!
