Kimberly helped me by developing a menu that is best for a person, like myself, with neuropathy. I am not certain how long it took her to research the condition (although I am sure it took quite a bit of time) and develop menus but she came to my home and did demonstrations of several things on the menu so we were able to have a nice sampling of each one! She even allowed me to invite others who might benefit by the presentation. There were several dishes that we were able to taste which made it much easier for me to, later, incorporate new foods and menus into my eating plan. If I would have had to try them from scratch myself, I still would probably not have the courage to try things that were unfamiliar to me. Kimberly demonstrated several different items on the meal plan which included (everything made from scratch---to avoid the additives in store bought, pre-made foods) homemade cinnamon coconut almond milk, banana bread overnight oats, spring rolls, spicy hummus, nori veggie wrap, cilantro almond cashew dip, avocado festival chick pea salad, anti-inflammation tea, and pain healing tonic. One thing, made ahead of time because it had to be baked was cinnamon flax apple crackers...who knew you could make your own crackers! Our final sampling, which was like the healthiest desert ever, was a spinach/cashew/banana smoothie made with the homemade almond milk Kim had demonstrated earlier.
Kimberly was early and had everything ready when the guests arrived. The entire demonstration ran smoothly and took the 60 minutes Kimberly estimated. She encouraged questions and comments and interacted with the group pleasantly, explaining and answering questions as she created the fresh and well prepared food.
There was so much going on with the variety of dishes that Kimberly quickly realized that she needed an assistant to facilitate removing and adding various ingredients to the demonstration table. Kimberly remedied that situation immediately by recruiting a volunteer from the audience...no one knew that it wasn't all part of the original plan!
