I start out with not just the basic techniques for playing, but for the style you are looking to master. Then have the client make a list of songs to cover, basically giving them training for themselves to play by ear, and show them some examples and ways that I have learned how to do so.
We end up getting students here who have taken lessons just about everywhere else in town. Our approach is different in that we don't "baby step" our students in an attempt to increase the number of lessons they will take. On the contrary, we move fast, but keep it fun, too.
