I mean, it was crazy! He whipped out little luxurious pizzas with homemade dough, wafers with salmon and exotic sauces, a salad made entirely of flowers that reset our palettes, gorgeous Grassfed steaks with freshly forgaged porcini mushroom sauce, perfectly cooked Sunnyside yolks wrapped in dainty lettuce on a crispy bed of pork… Basically, I had no idea dishes like these existed and just felt like royalty dining on them. On top of all that he can show up in any kitchen-like environment and just magically produce it all… outdoor by the fireside, no problem, 10th floor, Manhattan, tiny kitchen, no problem, dorm room with a hot plate no problem, somehow he executes the directive and exceeds expectations; in fact, his real genius is turning hardship into success… He can literally use culinary sorcery to turn a disaster into a unique success. For instance, all the stores were out of whipped cream. I had agreed to provide for our dessert and I was freaking out, but he just calmed me down and used some extra avocados and cacao powder and agave nectar to make a chocolate tiramisu that turned out way better than even the dessert we had planned! And then, there is the way he describes the history of each dish and how it is made. He is so excited and passionate about food that if you invite him too, he will describe all the nuance and flavor of each dish he places before you. I wish I could just have him cook everything for me and to educate me on how to enjoy every dish as well! What a five star experience from tip to stern, what a pro he is.
