Our oven operates at temperatures of 900 to 1000 degrees, cooking pizzas in just 90 seconds. This is the best way to capture the fresh flavor and smokey flavor from a wood burning fire. We use 00 high gluten flour, along with San Marzano tomatoes for the sauce both imported from Italy.
