I worked with Chef Francoise Brana in Croatia on a 45m Motor Yacht for a good part of the summer season.
When she arrived, I was very pleased to see offhand that she was going to be a pleasure to work with. She was friendly, open and conducted herself in a very pleasant and professional way.
Being the Chief Stewardess, it is so important to have a close working relationship with the chef and since I have worked with many that have not so agreeable, I really appreciated everything about Chef Brana as I got to know her over the season.
She is kind and caring and always made sure each crew member was happy with the food they were presented with. We had a number of different nationalities on board and a few with dietary specifications - a vegetarian, a crew member with a sensitive stomach, myself with wheat, gluten and diary sensitivities and then the others with their own likes and dislikes and ways of eating.
Chef Brana always made sure each person had something that they could eat and enjoy and have enough energy to perform the daily tasks at hand.
I am predominantly a vegetarian and really appreciated the delicious, nutritious, creative and healthy vegetarian food prepared by Chef Brana on a daily basis. The meat eaters would happily eat their selection dishes and could not wait to climb into her vegetarian selection as well since it was such good food and complimented the meat perfectly.
She uses her knowledge of health and the importance of good nutrition and a balanced diet to create meals for those who do not eat meat, enabling them to have the same energy levels and infact an even healthier life style.
She is an absolute pleasure to be around, always made me smile and laugh and I would highly recommend her first and foremost as a highly capable chef and secondly a wonderful person and employee/co-worker.
