"I came to Gregg to build on my general cooking knowledge and learn new skills, but more specifically to learn how to prepare, cook and present specific dishes including seafood, beef fillets and desserts. My goal was to prepare myself and a specific menu for working aboard yacht charters, and I needed to learn how to prepare high quality food in a small space.
Gregg was excellent, from the beginning he built my confidence in specific areas such as knife skills, working in small spaces and pre-preparing bases for food that can be used in different ways. His instruction was calm, confident and he simplified techniques that I had previously thought were too complex for me to achieve. Gregg took the time to tailor my experience to my specific needs, giving me advice on procuring and storing food in the area I would be working in. He advised me on timings, portions and flavours which allayed many of my fears and has given me a much needed confidence to go forward with my new job. Gregg is a wealth of knowledge and his years of experience in different settings really comes through. He's a calm and methodical chef and a very personable man, I enjoyed my experience with Gregg hugely and would recommend him whole heartedly."
