Thorough review- tasting and actual event.
I had the pleasure of hiring Chef Roy for my first personal chef experience for my Wife and I's anniversary. Based on his great reviews and thorough quote response, I decided to request a tasting for his shrimp creole. Chef Roy arrived on time, professional, and seemed to love the art of cooking. I didn't think I would finish the generous sample tasting (free of charge BTW) but by the time we finished chatting, there was no more to take home! Fresh shrimp and vegetables.
I hired him right on the spot and we began shaping the menu. I wanted my wife to have a little bit of everything, so I ordered his crab stuffed mushrooms, seafood gumbo, shrimp creole, and three desserts.
The day of the event, Chef Roy arrived 1.5hr ahead of scheduled dinner time to prepare. He allowed us to have personal conversation while he prepared our meal which was great. As a complimentary thank you for our business, Chef Roy prepared boudin balls as an appetizer. Sooo good!

He used gloves and lightly cleaned as he went along. Very personable, yet professional. Great experience!
