Underground Fine Dining is a company formed by Chef Dustin Brandt that brings a new way of looking at the dining scene. Unconventional venues are transformed to create a unique dining experience outside of the normal brick-and-mortar restaurant. Each night the pop-up themed restaurant changes location and tasting menu based on seasonality and inspiration of the space. This freedom facilitates innovative and inspired cuisine that constantly evolves while challenging boundaries. Chef Dustin Brandt is a French trained chef that applies classic techniques to a modern global cuisine. In the past five years, he has resided in Boulder Colorado while working at Frasca Food and Wine and recently closed a chapter on a three year stint as chef de cuisine at L'atelier. During this time, many relationships were established with local farmers, which provides diners with a taste of Colorado's finest ingredients. Event venues will take on many different shapes that includes a beautiful vacation home overlooking the flat irons, a train, a farm, or a neighborhood diner. What is your specialty or signature dish? or What do you most like to cook? I always have trouble with this one because I have a passion for cooking (and eating) all types of foods and cuisines. My military career blessed me with a unique opportunity to sample and explore all sorts of international foods and I have been stationed and lived all across this great nation from mu childhood in New England through the midwest, Hawaii and the west coast, to my current home here in Colorado. I love seafood (especially lobster and scallops), German cuisine, and sushi ... but continue to explore and enjoy cooking foods from all around this county and world. It truly is a lifelong journey! Serving high quality, fresh, flavorful and nutritious meals, and being creative with flavor profiles and food/ingredient combinations. I prefer to make all my food from scratch. I use fresh ingredients and can accommodate organics, vegan. vegetarian, gluten and dairy intolerances when requested. I am willing to consider most budgets and offer some really excellent choices to match your needs. I love making home made food that people love. Not the " run of the mill" food. I don't just cater typical foods you see all the time at events. I go above and beyond.(show less)

We use only Red Bird Farms Chicken, most all of our sauces and dressings are made in house and are Gluten Free. We have worked very hard to come up with creative and tasty healthy meals as well specialty dishes for our vegetarian and vegan customers.
