I've known Tom Letts in various capacities, particularly that of a friend as he has had an interesting career, crossing paths with our lives and with our interests.
Tom is a Chef-At-Heart. Tom never heard the term, "Fast Food." without coming up with an alternative that was twice as nutritious, twice as interesting, and twice as much fun. Not many amateur chefs I know would pack up his favorite pot, favorite knives, and detour into organic food stores where his lively imagination could innovate a recipe to fit something fresh and exciting, promising to make it through his kitchen to come out surprising and delicious.
At the same time, Tom is a patient innovator who can take something like a mushroom of unknown flavor, doing small maneuvers between sink and stove, coming up with something simmered and slow-savored to just the "different" kind of sauce. Tom is a fearless shopper, buying things that are unusual, sometimes exotic, sometimes experimental and handsome on the plate. and nothing is too much trouble.
I've lived next door to Tom from time to time. The sounds and scents of Tom-in-the-kitchen are an experience of joy and excitement. You should try it!
